I meant to post on April 15, but life was crazy. I barely had a chance to think about the Titanic. Luckily, I was reminded--reminded! Me, the girl who used to wake up by chance at 2:20 a.m. every year without setting my alarm, had to be reminded at 10:00 a.m. that it was the commemorative anniversary of Titanic's sinking on April 15.
Though slightly embarrassed to confess what I just did, I think it still important to remember. I did watch clips of Titanic with my husband yesterday morning. Don't worry, though, May 7 is right around the corner, and while I am obsessed with Titanic, there is a special place in my heart for the Lusitania. I will be posting then as well. It's about thyme time.

So, this blog is really supposed to be based on me as a writer and history enthusiast. What happened to that?
Good question.
I really don't know. She has kind of faded into the whirl of typing minutes, grading essays, editing articles, a desk job, students, and, where my free time has really gone, cooking. When I'm not cooking, I am on the internet searching for new recipes. If you haven't noticed, this blog has definitely gone that way. It probably still will too, but I would like to refocus my energy on something I have loved in the past and believe I will continue to love... writing.
I'm considering this. When you see the badge on my blog, you'll know I've begun.
I also plan to read a lot more.
We'll see. Goals again.

You let me get sick, again.
Fevered all night last night, body aches, coupled with the normal stomach pains of the past few months, and I had to miss work. What can I do to convince you to be kind?
This weekend I will be kind to you. Can you help me so that I can go to work all of next week and be happy and healthy?

Last week I...
- Exercised every day. Jeff and I started walking and even a little jogging.
- Cut out treats--except the two brownies I had at work that had a dyeing effect.
- Ate salad almost every day with olive oil and balsamic vinegar, tomatoes, apples, etc.
- Started Power90... again.
- Took multivitamins daily.
- Went to bed before ten almost every night.
- And so much more. You know what I did.

I had to buy a huge box of 60 waffles last week because we go through a box of 24 in one... and, no, I am not the culprit.
And, yes, I do eat them in bed.
And, yes, I would like to improve my photography... Any suggestions?

Pleasantly surprised

I've been struggling lately with feeling well and I believe food has something to do with it. Lately, (besides the Milano cookies I bought today) I've been trying to eat more healthily.
This was the result. At around 8:30 p.m., I was hungry and craved zucchini.
Here's how you do it:
{ingredients}
- 1 zucchini, sliced or diced, whatever you prefer
- 1/2 cup fresh green beans (love them)
- 1/3 cup diced onions
- 1 Tbs. olive oil
- garlic salt, to taste
- lemon pepper, to taste
Once it has cooked thoroughly, dish and add garlic salt and lemon pepper to taste--it made the dish for me!
